Jackfruit is a fruit popular in the hilly terrains of Kerala. This Jackfruit halwa is one of my all time favourite. It is a delicious Indian recipe served as a Dessert. Here is the recipe of jackfruit halwa which is a nostalgic sweet for most of us.
Ingredients:
· Jack fruit - 1/4 kg (de-seeded)
· Jaggery - 1/4 kg
· Ghee - 3 tbsp
· Cardamom powder - 1/4 tsp
· Fried cashews - few
Preparation:
· Melt jaggery cubes with 1/4 cup of water and after cools down strain it to remove impurities. Keep aside.
· Pressure cook jackfruit with a cup of water for four whistles
· After releasing the pressure by itself open the lid and cooks it with melted jaggery syrup.
· Cook for about 30-35 minutes or until all the water gets dried off (stir well continuously).
· When it absorbs all the water and started leaving the sides of the pan; add ghee and keep stirring for another 10-15 minutes.
· Add fries cashews and cardamom powder; mix well and switch off the flame.
· Allow to cools down; and serve it!
